Every summer our neighborhood has a huge BBQ at the park across from our house. We attend every year and this year Josh and I were asked to help with the food. I wonder why…ha! The menu was easy: hamburgers, hot dogs, green salad, pasta salad, chips, watermelon, and ice cream bars for dessert. The only tricky part was making all of this food for 200 people. We had a busy day in the kitchen! It was worth it though because everyone had a great time and enjoyed the food.

The party was a few weeks ago and I am still getting requests for the pasta salad recipe. So instead of writing it down or emailing it out to our neighborhood, I decided to share the recipe on our blog. That is why we have a blog:)

So today you are all getting the Easy Summer Pasta Salad recipe we made for our neighborhood BBQ. I hope this makes you feel like you are part of our neighborhood. I wish you could all really be our neighbors. I could sure use some more cookie samplers:)

I love this pasta salad because it is loaded with fresh summer vegetables. It is a great recipe for using up all of the vegetables from your garden or farmers market haul. The vegetables make the salad bright and colorful!

For the salad, we used DeLallo’s Farfalle pasta. I love using butterfly pasta because it is pretty and fun to eat! To the pasta, we added tomatoes, cucumbers, bell peppers, artichokes, fresh basil, and feta cheese. We tossed the salad with balsamic dressing. I cheated and used store bought balsamic dressing since we were making pasta salad for 200 hundred people. You can easily make your own dressing if you wish, but sometimes it’s nice to cheat:)

This Easy Summer Pasta Salad is a great recipe to take to summer BBQ’s and potlucks. It transports well and can be made for the masses. You can easily double, triple, or times this recipe by 10 if you need to. Just make sure you have a big bowl:) We also love eating this pasta salad for lunch or dinner. It is good for any summer meal! Enjoy!

    This Easy Summer Pasta Salad recipe is loaded with summer vegetables and perfect for summer BBQ's and potlucks.
    Ingredients:

    1 pound dry pasta (we used farfalle)
    1 small yellow bell pepper, seeds removed and diced
    1 small red bell pepper, seeds removed and diced
    1 small orange bell pepper, seeds removed and diced
    1 large seedless cucumber, chopped
    1 (12 oz) jar artichoke hearts in water, drained and chopped
    1 pint grape tomatoes, halved
    1 cup store bought balsamic dressing (use your favorite brand)
    1 cup crumbled feta cheese
    1/3 cup finely chopped basil
    Salt and black pepper, to taste

This Creamy Avocado Pasta Salad is no joke! It’s loaded with diced California Avocados, plump tomatoes, crispy bacon and fresh basil all tossed with a creamy avocado ranch dressing!

One of the fantastic perks of being a California Avocado Ambassador is when my monthly shipment of California Avocados arrive at my door. This past year I have gotten a new delivery guy, and apparently out of all the packages he brings to my door he has taken notice of the avocados.

When he knocked on my door this last time he handed me the box and said, “These must be very good!”

“Oh yes, they are the absolute BEST! They’re California Avocados!”

Did you know that California produces approximately 90% of the nation’s avocado crop?

Fun fact – I was born in California. Only the best things are born there… wait what?! ;)

But seriously people, this Creamy Avocado Pasta Salad is divine. The dressing is a combination of ranch and fresh avocado. I squeezed just a bit of lime juice in there to give it the perfect zip. Then I diced up even more avocado and tossed it in the salad. The crispy bacon crumbles in there give it just the right amount of crunch and smokiness.

I served this salad with some ribs and a side of grilled corn on the cob. Everyone absolutely enjoyed it, and practically licked their plates clean.

Creamy Avocado Pasta Salad

Yield: serves 8 to 10

Ingredients

    16oz large shell pasta
    1 California Avocado, diced
    1 1/2 cups grape tomatoes, halved
    6 strips thick cut bacon, cooked and crumbled
    2 tablespoons fresh basil, ribboned
    For the Dressing:
    1 cup ranch dressing
    1 California Avocado
    1 lime, juice of
    1/4 cup chopped cilantro
    1/4 tsp salt

Instructions

    Prepare the pasta according to package directions. Once tender drain the pasta and run cold water throughout to cool the pasta down. Place in a large bowl.
    To prepare the dressing add all the dressing ingredients to a blender and process until smooth. Pour over the cooled pasta and toss to coat.
    Fold in the diced avocado, grape tomatoes, bacon, and basil. Season with additional salt and pepper if desired. Enjoy!

Chicken Nicoise Pasta Salad from Foodie Crush

The New Years resolutions have rung themselves in. And some of them, for some of you, are already on their way out.

This year I’m not making New Years resolutions. Instead, I’m setting goals that aren’t beginning-of-the-year-dependent, the kind that once the shiny sparkle of the New Year has faded so with it go the good intentions of achieving those rock hard abs and closets that look like they were ripped from the Container Store catalog.

That’s just not where I am anymore, looking toward the unknown of what might or might not work, what might or might not make me happy.  It’s not that I don’t want to be in good health or have a clean and organized home, its just that I know time is precious and flies by too quickly. Instead, I’m going to go retro this year. I’m going to remember the way I used to behave, the way I used to enjoy, because I know what I did then worked and made me happy. The essentials are there, and can easily be adapted to where I am now in my now, much happier life. So, here are my goals for this year.

GOAL 1. The perennial goal on everyone’s list: Eat healthy. While I’ve been on a continual diet of one sort or another for the past 17 years or more—with a background working at a nutrition magazine where I learned more than most about each and every diet book, fad and trend, believe me when I say, I’ve talked about or tried them all—I’ve found the constant obsession with what goes into my mouth has only led to feelings of deprivation or an increased aversion of being photographed after my daughter was born 8 years ago thanks to an upward tick of the numbers on my home scale. (See goal #2.)

This year instead of doing Weight Watchers, Atkins, Mediterranean, or eating due to my blood type, I’m going minimal style and simply watching what I eat and incorporating plenty of fresh veggies into my diet. I’m going back in time to when I was at a weight I was at for years (and maintained thanks to exercise, again see goal #2) and harkening to the portion sizes I ate in my younger days. Smaller portions, fresher portions leaving room for my beloved cheese and a few snacks along the way. It worked then, it should work now.

GOAL 2. Getting off my butt and out from behind the computer. As referenced in goal #1, after the birth of my daughter I lost all the baby weight relatively easily after my Smudge was born thanks to the muscle memory my body had from seven years of working out with a trainer prior to my baby delivery.

But thanks to a new morning routine of juggling a kid, a full-time work load plus a few hi-jinks my body played on me thanks to childbirth, my exercise habit was, and has been, greatly reduced, resulting in an expanding waist line and way less time for the gym. Yep, those are my excuses. The ones I think of every time I hit my snooze alarm instead of getting up and moving my butt. The ones I think of every time I pull my jeans from the dryer after they accidentally got mixed in with the heat instead of air dried and I realize its going to be a wrestling match getting those babies on.

So this year, my goal is to get up and move, just like I used to 3 times a week when I worked out with my trainer. I’m going to make time for me and schedule my workouts just like I schedule time to create a blog post or vacuum the house. So whether its right after I pop the contacts into my bleary and barely opened eyes or once I’ve “shut down” for the day as a separation from my home work like and home family life, the trainer may no longer be in my budget but the exercise surely can be.

GOAL 3. Be a better friend and get off of my one way street. I have several people in my life who have been with me through a myriad of mazes and situations, friends who have knitted themselves into the fabric of my life. Over the past few years I’ve a few more who after getting to know them on the surface, I’d love to add them to the deeper thread of my life’s fabric of friendship.

I’ve been driven to create a job, a career, one that’s taken a lot of focus. But in doing I’ve let my need for friends to take the fall. This year I’m going to harken back to the time in my life when I was a better friend, and to create that balance and restore my friendships will mean I must give more of myself instead of taking for myself and quit being a martyr by putting my work in front of friendships.

I have to invest in my friendships, both old and new, to have friends. A strong friendship, just like any personal relationship, is not a one way street. And as much as I need friends, they need me too. This will be the year my goal will be to send more flowers, writing more friend songs and heed the wise words of Neil and Barbara.

4. Create more memories. This was my main goal for 2012, and I truly think some of the changes I made in my life and my schedule made me actually achieve it. I quit my job working for someone else and am now an independent business owner, allowing me to pick up my daughter after school and the flexibility to have more time with her and my husband.

I feel like I created a better balance of family time and social media time (although my husband will likely dispute this) and I took a social media sabbatical from Christmas thru this past week to create family memories both around the Christmas tree thru New Years on an amazing, relaxing Mexican vacation. Sure there was plenty of cooking that would have put me squarely ahead of my editorial schedule to create some amazing blog posts, but instead of being busy documenting and taking myself out of the moment and being present and accounted for, I relaxed and simply enjoyed it all.

This year I’m going to do more of the same as last year, focusing on mini vacations for my family and more time to be us, whether its in the kitchen or on the slopes. It won’t matter as long as we’re together.

I highly recommend that if you are a blogger, that you too take vacation—from yourself. It’s the only way to be inspired to continue to give back.

Before I left for my New Years vacation, I created this delicious salad that works oh so well for bringing a bit of freshness with ingredients available all year round into the winter wonderland thanks to crunchy veggies, chicken and pasta. It’s hearty enough to serve as a main or can easily be adapted as a side.

And best of all it addresses and adheres to each of my goals for 2013:

goal 1. It’s a healthier version of pasta, delicious in just the right portions.

goal 2. It’s perfect to be eaten as a lunch or dinner after you’ve gotten moving or even before thanks to high protein and a healthy dose of carbs.

goal 3. It’s simple to create and is easily transportable to share with a friend on a park bench, beach blanket or a dinner table.

goal 4. It’s based on mine and my mom’s favorite pasta from one of our favorite eateries where they serve it with French Onion Soup.

I hope it helps you in some of your 2013 goals as well. Good food, it does that.

The secret to a really delicious salad, is a really delicious dressing. If you want to eat a bowl full of healthy, low calorie vegetables, make your own dressing. You can’t beat home made dressing and if you make enough for a week, it’s worth taking the time. If you want to keep it vegan, here is my Vegan Ranch Dressing.

Once you have the ingredients, this dressing doesn’t take a moment to make. Just put everything in the food processor and blend.  I like to make a mild dressing by scraping out the seeds and  the membrane of the Jalapeño. If you like a bit of heat, don’t scrape out as much.

Leftovers
The rice and garbanzo beans were leftovers from another meal. With just a little preparation, you can eat home cooked, preservative free, delicious meals, that can be ready in a few minutes.

Menu Plan
Plan on making a dish with rice and then make this salad a few days later. This is when having a menu plan for the week can really help you. Even if you only start with 2 healthy recipes per week, and the rest is take out, it’s a great start to changing eating patterns.

How to Save Time in the Kitchen

    Start a weekly menu plan. Just start with one recipe, and master that dish. Build on your plan every week. Eventually you will have some go-to dishes you can knock up in a heart beat.
    When you chop a vegetable, chop twice as much as you need and put the rest in a PVA free Container with snap lid in the fridge.
    When you can, make double, eg soup, rice, salad, chopped onion, peeled carrots.
    Make enough to freeze a few portions (things that freeze well) like soups, burgers.
    Make double baked potatoes and use the leftovers the next day for breakfast hash.
    When you make salad, make it giant, and eat it 3-4 times.
    Know where everything is in the kitchen and have a place for everything.
    Take your recipe to the store so you won’t forget anything.
    Make the same dishes often. If you find a healthy, low calorie dish, keep the recipe and make it again. The more you make it, the faster you will get.
    Master some one pot recipes, Garlic Shrimp with Asparagus, Eat All You Want Soup, Black Bean Soup, Easy Lemon Chicken with Artichokes.
    Clean as you go. It’s so much easier to prepare food if your area is free of clutter.


Spring Salad with Smoked Salmon and Jalapeño Ranch Dressing

Ingredients

    1 Cup Brown Rice - Or White
    1 Can Garbanzo Beans - Or any bean - Optional
    ½ Cup Wild Rice - Optional
    Cherry Tomatoes
    Cucumber
    Red Onion
    Yellow Pepper
    Green Pepper
    Ranch Dressing
    1 Cup Greek Yoghurt
    ½ Cup Milk
    4 Cloves Garlic
    1 Jalapeño Pepper
    Fresh Parsley
    Fresh Dill

Instructions

    Place dressing ingredients in food a food processor and gently blend. Chill in a mason jar.
    Place rice in a pan with 2 cups of water and a lid.
    Cook on a slow boil for 45 mins or until soft. Drain if necessary.
    Cool rice.
    Layer salad in bowl and top with dressing.

This is very refreshing and delicious Fruit Salad recipe using the 1-2-3 Fruit Dressing. I use whatever fresh fruit is in season when making this salad. The 1-2-3 Fruit Dressing is from an older Betty Crocker Cookbook. The combination of citrus fruits in the dressing gives the salad a wonderful delicious flavor! Sometimes the older recipes are the best recipes!

Winter Salad - In this version of fresh fruit salad, I used whatever fruits were in season in the winter months.

Summer Salad - In this version of fresh fruit salad, I used a lot of fresh summer berries. The berries and cherries put a natural dye on the rest of the fruits.

Fresh Fruit Salad Recipe - Winter and Summer Fresh Fruit Salad Recipe:

Recipe Type: Salads, Fruits
Yields: 8 to 10 servings
Prep time: 20 min
Fruit Dressing Cook time: 5 min


Ingredients:

1-2-3 Fruit Dressing Dressing (see recipe below)
5 to 6 cups of a variety of fresh fruits of your choice (be creative):

    Bananas, peeled and sliced
    Blueberries
    Blackberries
    Cherries, pitted
    Raspberries
    Strawberries
    Green and/or red grapes, halved
    Kiwi fruit, peeled and sliced
    Pears, peeled and sliced
    Peaches, peeled and sliced
    Mango, skinned, cored and sliced
    Oranges, skinned and cut-up
    Pineapple, cored, peeled and sliced
    Watermelon, flesh removed and cut into bite-size pieces, flesh removed and cut into bite-size pieces
    Melon (cantaloupe & honeydew), flesh removed and cut into bite-size pieces, flesh removed and cut into bite-size pieces


Preparation:

Prepare 1-2-3 Fruit Dressing; set aside until ready to use.

In a large bowl or container, combine all the mixed prepared fruits.

Pour prepared 1-2-3 Fruit Dressing over the cutup fruits; gently toss to coat all the fruit. Serve family style or for a gourmet look, serve in chilled cocktail glasses.

To store, cover and refrigerate for several hours before serving.

Makes 8 to 10 servings.

1 lemon - grated zest (rind) and juice
1 lime - grated zest (rind) and juice
1 orange - grated zest (rind) and juice
1 egg, well beaten
1 cup granulated sugar

NOTE: Grate the zest off of the citrus fruits first before juicing them.

In a saucepan over medium heat, combine the zest and juice from the lemon, lime, and orange. Add the beaten egg and sugar. Cook, stirring constantly, until mixture comes just to a boil; let boil 1 minute still stirring constantly.

Remove from heat and let cool before tossing with the fruit salad.
