Everyone needs a good strawberry spinach salad recipe. It’s a springtime must, don’t you think? On Sunday night I was asked to bring a salad to our Easter family gathering, and this salad was perfect! It goes great with a ham dinner.

Strawberry Spinach salad with bacon

Poppyseed Dressing:
2 tablespoons sesame seeds
1 tablespoon poppy seeds
1/2 cup white sugar
1/2 cup olive oil
1/4 cup distilled white vinegar
1/4 teaspoon paprika
1/4 teaspoon Worcestershire sauce
1 tablespoon minced onion

For the salad:
1 bag of fresh (pre-washed) spinach
1 quart strawberries – washed and sliced
1/4 cup sliced almonds, toasted
1/2 cup crispy bacon pieces
1/2 cup crumbled queso fresco

Directions:

For the dressing: whisk together the sesame seeds, poppy seeds, sugar, olive oil, vinegar, paprika, worcestershire sauce and onion. Cover, and chill for one hour.

In a large bowl, combine the spinach, strawberries, almonds, bacon and cheese. Pour dressing over salad, and toss right before serving.
