Recipe of the Week: Spring Wild Rice Salad

Wild Rice Salad • Serves 4 to 8

When it comes to cooking gluten-free dishes, which I do because several close friends and family members feel better when they don’t eat gluten, I prefer to ingredients that are naturally free of the protein, as nature is full of them. In the past, I’ve made wild rice salads mostly in the fall and winter, with pomegranate arils and cranberries but it lends itself to all seasons.

    1 cup wild rice, rinsed
    Kosher salt
    4 tablespoons freshly-squeezed lemon juice, plus more to taste
    ¾ cup chickpeas, cooked until tender and drained
    ¾ cup shelled, glanced and peeled fresh favas
    3 or 4 green onions, trimmed and cut into very thin rounds
    ½ slivered almonds, lightly toasted
    6 tablespoons extra virgin olive oil, plus more to taste
    ½ cup fresh chopped Italian parsley
    Black pepper in a mill

    Put the wild rice into a medium saucepan, add 3 cups of water and 2 teaspoons of kosher salt and bring to a boil over high heat. Reduce the heat and simmer gently until the rice is tender but not too soft, about 40 minutes.
    Cover and set aside for 10 minutes. If any water has not been absorbed by the rice, tip it all into a strainer to drain off the excess water.
    Transfer the wild rice to a wide shallow bowl, add half the lemon juice, toss and set aside to cool.
    Add the remaining lemon juice, the chickpeas, the favas, the green onions and the slivered almonds to the wild rice and toss gently. Add the olive oil and parsley and season with several turns of black pepper.
    Taste the salad, correct for salt and for acid balance, adding a bit more lemon juice if it is not tart enough for you and a bit more olive oil if it is too tart.

Variations:

    Add ¾ cup crumbled feta cheese and 2 teaspoons chopped fresh oregano.
    Use blanched English peas instead of favas and replace half the parsley with shredded mint.
    Serve over arugula, pea shoots or other small greens that have been tossed with a little salt and olive oil.
    Serve grilled and sliced duck breast, grilled and sliced skirt steak or grilled chicken thighs on top of the salad.
